Diwan Handi

I got this recipe from Sanjeev Kapoor's recipe book. I tried yesterday as a combination for Pulao. It came out pretty good. It is also good with Chapathi.

Mixed vegetables (Potatoes, Carrot, Green beans, Peas, Brinjal) - 1 Cup
Chopped fenugreek leaves and coriander leaves-1/2 cup
Onion-1 chopped fine
Ginger-garlic paste-1 tsp
Turmeric powder-1/4 tsp
Red chilli powder-1/2 tsp
Coriander powder-1 tsp
Yoghurt/Curd-1/2 cup
Salt
Garam masala powder-1/4 tsp
oil

Procedure:
1.Boil the vegetables.
2. Heat oil in a pan and fry onions along with ginger garlic paste and turmeric powder.
3. After the onions are fried well enough, add red chilli powder,coriander powder and fry.
4. Then add vegetables and fry. Once the vegetables are well cooked, add yoghurt,salt,coriander and fenugreek leaves
and cook till oil seperates.
5.Add garam masala powder and fry for a minute.
