Ingredients:
Leftover Idli/dosa batter or Rice-2 cups and urad dal-1 cup
Onion-1
Green chillies-6
Coriander leaves
Ginger- a small piece
Cumin seeds
Salt
Procedure:
1. Finely chop all the vegetables and mix all of them togather with salt and cumin seeds.
2. If you are using leftover batter then add little rice flour.
3.Heat the pan and spread the batter little thick.Drizzle oil around the uthappam and immediately sprinkle vegetable mixture. Wait till the bottom of the uthappam is cooked. Flip and cook for a min and serve with chutney of your choice.
I like it with Tomato chutney.
