Sambar

Ingredients:
Toor dal-1 cup
Onions-1
Tomatoes-2
Green chillies-2
Other vegetables-Drumstick,Brinjal,Potatoes,beans,pumpkin,cucumber etc
Tamarind paste-1 tbsp
Salt
Sambar powder-1 tsp
Jaggery-1 tsp
For seasoning:Mustard seeds,cumin seeds, red chillies,curry leaves and hing

Procedure:
  1. Pressure cook toor dal along with all the vegetables and turmeric and mash it well.
  2. In a pan, heat oil and add seasoning ingredients.When they splatter add the toor dal,tamarind paste,salt,sambar powder,jaggery and water and bring it to boil.
  3. Garnish with coriander leaves.
Generally people fry vegetables separately and add them to dal so that they are not mashed much. But I look to cook dal and vegetables togather cause it is easy and takes less time.
