Punjabi Khadi



I got this recipe from sanjeev kapoor cooking book.


Ingredients:
For Pakoras
Besan-3/4 cup
Onion-1 chopped fine
Fenugreek leaves-1/2 bunch chopped fine
Ginger-grated
Ajwain-1 tsp
Red chilli powder-1 tsp
Baking powder-1/4 tsp
salt
oil-to deep fry

For Kadhi
Yoghurt-1 cup
Besan-1/4 cup
Turmeric powder
salt
ginger
Red chillies whole-2
oil-2 tbsp
Fenugreek seeds-1/2 tsp
Cumin seeds-1/2 tsp
Peppercorns-6
Red chilli powder-1 tsp

Procedure:
1. Mix all the pakoras ingredients except for oil.Add 1/2 cup water.
2.Heat oil in a kadai and add portions of pakora mixture and deep fry and keep them aside.
3. Whisk yoghurt well and mix besan. Make sure there are no lumps.Add turmeric powder,salt and 3 cups of water.
4.Heat oil in a kadai and add methi seeds,cumin seeds,red chillies and peppercorns.Also add ginger.Add yoghurt mixture to this and bring to boil and then simmer for 10 mins stirring occasionally.
5.Add red chilli powder and fried pakoras and simmer for 5 mins.
