Idli with peanut chutney

Idli:
Idli rava-2 cups
Urad dal-1 cup
Fenugreek seeds-1/4 tsp

1.Soak all the above ingredients for 2-3 hours and grind with salt. Let it ferment overnight.
2. Grease idli moulds with ghee/oil. Pour a laddle of batter in each mould and steam cook for 10 mins.

I sometimes make Idli batter with Idli rice. So while doing that take 2 cups rice and 1 cup urad dal and soak them in the water seperately along with fenugreek seeds. 30 minutes before grinding soak 1/2 cup poha or puffed rice and grind all the ingedients and let the batter ferment for 8 to 10 hours. Poha or puffed rice gives you soft idlis.

Peanut chutney::
Peanuts-1 cup
Red chillies-6
Tamarind paste-1 tsp
Salt
For seasoning:Mustard seeds,jeera,red chillies,urad dal,channa dal and curry leaves.

1.Dry roast peanuts and when they cool off grind them with red chillies,tamarind and salt.
2.Heat oil and add seasoning ingredients.

This chutney goes well with idli,dosa,utthappam, pongal
